About Sweet Gem Confections
Sweet Gem Confections is a small artisan chocolate shop located in Ann Arbor, Michigan. We create fine and delectable hand-crafted chocolates and confections in small batches. We seek out and use only the very best ingredients available, using chocolate produced by the best chocolate manufacturers from around the world who produce complex and distinctive flavored chocolates from single origins of carefully grown theobroma cacao.
The chocolate that we use changes often as we experiment with both small artisan chocolate makers such as TCHO from California who make multiple single origin chocolates which are all organic and fairly traded, and Swiss chocolate from Felchin's Grand Cru Sauvage and Maranon's Fortuanto No. 4 from Peru which is sourced from ancient origin cacao. In addition we source from Valrhona and Michel Cluizel from France, E.Guittard from California, and Cacao Barry from France. Of course the chocolate we secure contains only pure cacao liqueur, sugar, milk and real vanilla. The dark chocolate contains between 64% - 99% pure cocoa liqueur, and the milk between 38 - 45%. To this we add fresh cream, real butter, fresh fruits (many of which we gather ourselves), nuts, spices, herbs, espresso, and top-shelf liqueurs from around the world. We create complex and distinctively flavored chocolates that capture subtle flavor notes for a perfect chocolate tasting experience. Our chocolates are 100% preservative free and we suggest that you think of these chocolates like you would fresh produce. Enjoy them at room temperature within days of receipt!
Our chocolate confections are made to order by Nancy Biehn, cec (Chief Executive Chocolatier) who started a serious love affair with chocolate while living in Spain. With a passion for making great food and a love for chocolate, she has combined self-determination with technical training to create sweet gems of fine confection made by hand in small batches just for you!
